Parsnips are perfect in winter and what better way to eat them than roasted with the warmth of a spicy Caribbean-style seasoning to remind us that despite this bitter cold, summer is never too far away! This recipe is great as a side dish to accompany your favourite fish or meat recipe, or as a tasty snack on its own.
YOU WILL NEED:
1kg parsnips
10g Wild Fennel Co. white fish seasoning (1/3 sachet)
Olive oil (drizzle)
300g mayonnaise
TO MAKE:
Preheat the oven to 200ºC. Peel the parsnips and trim off both ends. Cut them in to chunky sticks and toss in a large bowl with a healthy drizzle of olive oil and the 10g white fish seasoning. Place on roasting tray. Be sure to leave space around each parsnip to ensure an even roasting.
Roast in the oven for 35 mins, turning occasionally until golden and tender.
Serve with an aioli for dipping.
